Crispy Puff Pastry Cheese Straws

1Preheat the oven to 200°C (390°F) top/bottom heat. Line a baking sheet with parchment paper.

2Whisk the egg in a small bowl. In a separate bowl, mix the shredded cheese (100 g), Parmesan, oregano, paprika powder (½ tsp), salt, and pepper.

3Unroll the puff pastry on the parchment paper. Brush the surface of the dough evenly with the whisked egg.

4Spread half of the cheese mixture evenly over the puff pastry. Press the cheese down lightly with your fingers so it sticks well.

5Cut the layered puff pastry in half lengthwise to create two long rectangles. Place the two rectangles on top of each other so the cheese is on the inside (or for extra cheese: only top one half and sprinkle the other half with the remaining cheese mixture before folding them over each other).

6Cut the layered dough into strips about 1 cm wide. Carefully hold each strip at both ends and twist it 2-3 times into a spiral shape.

7Place the twisted cheese straws on the prepared baking sheet, making sure they have enough space between them.

8Bake the cheese straws in the preheated oven for 12 to 15 minutes until they are golden brown, puffed up, and crispy.

9Remove the straws from the oven and let them cool slightly. They taste best warm as a snack or as an accompaniment to soups and salads.
